Cook (Cocinero) Job Description:
● The Cocinero provides all hot prepared recipes for the burrito line.
● This position requires proper execution of recipes, the ability to calculate recipe batch sizes, and a passion for cooking great food.
● The quality, temperature, and consistency of the food are the responsibility of the Cocinero.
● The Cocinero practices safe food handling procedures are educated on time and temperature controls for all food and maintain a clean, safe, and orderly work area.
● A typical day involves lifting hot and heavy pans, cooking multiple products at once, and cleaning and organizing kitchen spaces.
● The Cocinero knows when and how much of any item to prepare and recognizes when batch sizes need to adjust to business volume.
● The Cocinero communicates with the Kitchen Leads and MOD regarding all food-related operations in the kitchen including par levels, inventory, quality, equipment, and proper preparation of all menu items.
● The Cocinero’s direct supervisor is the MOD.
Cook (Cocinero) Daily Responsibilities:
● Evaluate prepared foods from the day before and or previous shift
● Checking daily prep list and completing assignments
● Evaluate batch amounts for all recipes and cook/reheat according to needs—smaller batches more frequently is the rule
● Cook all recipes properly and exactly according to recipe measurements and specifications—taste everything
● Have line properly stocked on time for open and throughout the day
● Regular rotation and stocking of hot food into clean and appropriate pans throughout the day
● Follow all cooling, labeling, safe food handling, and rotation standards
● Maintain clean and organized work areas at all times
● Properly clean and care for all kitchen equipment
● The prompt break-down and cleanup of the kitchen at closing
