Full Time Chef
$80,000 plus Superannuation per year
Duties and Responsibilities
• Plan and design menus, considering seasonal availability and customer preferences, while estimating food and labour costs.
• Prepare and cook a variety of dishes, ensuring quality and consistency in taste and presentation.
• Monitor the quality of dishes at all stages of preparation and presentation, making adjustments as necessary.
• Order and manage inventory of food supplies, ensuring freshness and cost-effectiveness.
• Discuss food preparation issues with managers, dietitians, and kitchen and waiting staff to ensure smooth operations.
• Demonstrate cooking techniques and advise on cooking procedures to kitchen staff.
• Enforce hygiene regulations and ensure compliance with health and safety standards in the kitchen.
• Select and train kitchen staff, fostering a collaborative and efficient work environment.
• Freeze and preserve foods as required, maintaining proper storage methods.
• Collaborate with front-of-house staff to coordinate service flow and address customer feedback.
• Assist in budgeting and managing kitchen expenses, keeping track of food waste and portion sizes.
• Contribute creative ideas for new dishes and improvements to existing recipes.
• Address any kitchen issues that arise, such as staffing shortages or equipment failures, ensuring minimal disruption to service.
• Maintain clear communication with all team members to ensure timely meal service and customer satisfaction.
Qualification and Experience
• Qualification in Commercial Cookery or a related field
• Minimum of 2 years of experience as a Chef in a commercial kitchen, preferably with experience in authentic Nepalese cuisine
• Proven ability to prepare and cook a diverse range of Nepalese and other dishes, including for high-volume service and functions
• Experience in menu planning and developing dishes based on seasonal ingredients and customer preferences
• Strong understanding of food safety, hygiene standards, and commercial kitchen operations
• Skilled in inventory management, ordering supplies, stock rotation, and minimising food wastage
• Experience supervising, mentoring, and training kitchen staff
• Excellent organisational, time management, and multitasking skills in a fast-paced kitchen environment
• Strong communication and teamwork skills to coordinate effectively with front-of-house and kitchen staff
• Ability to contribute innovative ideas for menu development while maintaining the authenticity of traditional Nepalese cuisine
• Demonstrated initiative, creativity, and commitment to continuous professional development in culinary technique
