Job Summary

The Chef ensures that all problems in his/her area are clearly identified and resolved quickly and effectively. He/She works together with the Kitchen Operations Manager and directly reports to the General Manager. He/She is directly involved in product research and development, costing and presentation. He/She is also in-charge of maximizing kitchen operations by effectively delegating tasks to the Sous Chef and other Cooks.

Responsibilities and Duties

Spearheads food preparation and cooking activities in the kitchen.

Determines manning schedule of kitchen staff.

Ensures that food portions are correct and the food is plated or packed according to set standards.

Develops new dishes and menus in cooperation with the Dietitian and Kitchen Operations Manager.

Ensures his team’s compliance to high standards of food hygiene by following the rules of health and safety determined by Top Management

Ensures continued efficiency of the kitchen and production of consistent, quality food.

Monitors portion and waste control to maintain profit margins.

Improves food preparation and presentations in coordination with the Marketing Team and Kitchen Operations Manager.

Qualifications and Skills

Complete mastery of basic cooking methods, proper food preparation, handling and storage procedures

Extensive knowledge of different ingredients (both locally sourced and imported) and recipes, more efficient cooking methods, and food presentation

Ability to work within a budget

Good organizational, communication, and people-management skills

Ability to stay cool, calm, and objective even in stressful times

Job requires proper hygiene and cleanliness as work involves frequent handling of food and kitchen equipment

Job requires working in the late hours of the day and/or on a shifting schedule.

Job requires working in hot or warm temperatures
