Job Description
The Chef will assist the Head Chef in the preparation and cooking of South Indian dishes while maintaining high standards of food quality, hygiene, and kitchen efficiency. This role involves supporting daily kitchen operations, mentoring junior staff, and developing culinary skills under supervision.
Key Responsibilities
• Assist in preparing and cooking authentic South Indian dishes in accordance with established recipes, portion sizes, and quality standards.
• Support the kitchen team during busy service periods to ensure timely and consistent food output.
• Support Head chef in daily kitchen operations, including mise en place, cooking, plating, and basic butchering or vegetable preparation.
• Assist in monitoring food stock levels and communicate shortages to the management and Head chef.
• Ensure consistency, portion control, and presentation standards are maintained at all times.
• Taste and inspect dishes before they leave the kitchen to ensure quality.
• Contribute to planning menus under supervision, particularly for daily specials or seasonal South Indian dishes.
• Discuss food preparation issues with Managers, kitchen, and waiting staff to ensure smooth service and address customer feedback or dietary requirements.
• Assist with receiving, storing, and rotating stock following FIFO (First In, First Out) principles to ensure freshness and minimise waste.
• Follow and maintain hygiene standards in compliance with Food Safety Regulations (Australia) and HACCP principles.
• Ensure personal hygiene and uniform standards are met at all times.
• Report any faulty equipment to the Head Chef promptly.
• Work closely with cooks and kitchen staff to ensure smooth service and timely preparation of meals.
• Communicate clearly with front-of-house staff regarding dish readiness or special requests.
• Participate in selecting and training new kitchen staff (e.g., Junior cooks, kitchen hands, or apprentices) under the direction of the Head Chef.
• Demonstrate techniques and advise on cooking procedures to junior team members, especially for basic South Indian cooking methods.
• Learn and apply advanced cooking techniques under supervision.
• Actively participate in kitchen briefings and contribute ideas to improve kitchen efficiency.
Skills, Qualifications and Requirements
Essential Qualifications
• Minimum Certificate IV in Commercial Cookery (highly regarded and preferred).
• Diploma of Hospitality Management (or higher) will be considered a significant advantage.
Experience
• Minimum 1–2 years of experience in a commercial kitchen environment (restaurant, hotel, or similar).
• Experience in a South Indian or Indian restaurant is preferred but not mandatory; a strong willingness to learn authentic South Indian cooking techniques is essential.
Technical Skills
• Basic knowledge of South Indian cuisine (e.g., dosa, biryani, curries, chutneys, tiffin items) – preferred.
• Understanding of food safety and hygiene standards (HACCP certification desirable).
• Knife handling skills and knowledge of various cooking methods (sautéing, grilling, boiling, tempering spices).
