Sous Chef – Lead
(Kitchen Lead on Duty / Shift Commander)
Primary Responsibility:
Run the kitchen during service and ensure food quality, pace, and standards are met.
Duties
Final authority on shift
Calls tickets and controls line flow
Assigns stations at start of shift
Monitors plating, portions, and food quality
Handles guest food issues or comps
Keeps communication with FOH clear
Ensures line stays stocked during rush
Oversees closing duties and checklist
Makes real-time decisions when problems arise
Owns:
Service pace
Food leaving the station
Shift cleanliness
Team performance during that shift
