Join the team at Trattoria Mezzomondo, a beloved and authentic Northern Italian culinary haven in Palm Desert! We are seeking an experienced and passionate Line Cook to help us deliver exquisite, scratch-made Italian cuisine in a warm, intimate setting.
Position Summary
The Line Cook is a vital member of our kitchen team, responsible for preparing high-quality Italian dishes according to precise recipes and standards. This role requires speed, precision, and an unwavering commitment to food quality and hygiene in a fast-paced environment. Experience with traditional Italian cooking techniques, especially homemade pasta, is highly valued.
Compensation & Schedule
Pay: $20 - $30 per hour, based on experience and skill.
Schedule: Full-time and Part-time positions available (primarily dinner service).
Location: Palm Desert, California.
Key Responsibilities
Prep and Production: Execute all station prep duties efficiently, including chopping vegetables, preparing sauces, portioning ingredients, and making fresh pasta (a significant plus).
Station Management: Expertly manage and work a specific station (e.g., Pasta, Sauté, Grill) during service, ensuring all food is prepared and plated accurately, to specification, and in a timely manner.
Quality Control: Maintain the highest standards of food quality, presentation, and consistency for every dish.
Cleanliness & Safety: Adhere to all health, sanitation, and safety regulations. Keep the work area clean and organized at all times.
Teamwork: Communicate effectively with BOH (Back of House) and FOH (Front of House) staff to ensure smooth service flow.
Required Qualifications
Experience: Minimum of 5+ years of progressive experience as a Line Cook in a reputable, fast-paced restaurant environment.
Culinary Knowledge: Proven ability and passion for cooking authentic Italian cuisine. Experience with scratch cooking and traditional methods is essential.
Pace: Ability to thrive under pressure and maintain focus, speed, and quality during peak service times.
Availability: Must be available to work evenings and weekends as required for dinner service.
Preferred Skills (A Plus!)
Language: Fluency or proficiency in Spanish or Italian is a significant asset for kitchen communication and recipe understanding.
Advanced Skills: Experience with Northern Italian cuisine, house-made pasta production, and working on small, high-volume service lines.
