• Implemented stability tests and shelf life studies to see how fruit concentrates can change in terms of flavor, color, and taste in different conditions such as room temperature, incubation, refrigerated, and frozen.

• Created an experiment to investigate why Perfect Lemon Water changes color when it is not exposed to light. The answer was Vitamin A was not stable and reverts back to beta-carotene when not exposed to light which creates a dark muddy color.
