(2) Handling of Kosher and Halaal accreditation third party Audit. (3) Release, maintaining retention samples and shelf life monitoring of raw materials. (4) Raw materials and finished products microbiological testing on Coliforms, E.Coli, S. aureus, Lactobacillus, Enterococci, Yeast and Moulds and lastly Salmonella. (5) Releasing finished products with stickers and COA’s, monitoring and record keeping of the Dispatch process: Truck hygiene inspection and temperature checks. (6) Internal Auditing of standard operating procedures and Food Safety Policies. (7) Handling of Non-conformances such as rejected and reworked stock and implement corrective and preventative measures thereof.

Duties includes: (1) Verifying scales in the factory and laboratory, (2) Calibrating the pH meter and refractometer, (3) Testing factory water for total residual chlorine. (4) Collecting samples aseptically and performing moisture analysis for pH, bulk density, salt content, absorbance and oven solids, (5) Ensuring that the packaging, weight and labelling are correct, and (6) Ensuring that the fridge, truck and hot room temperatures are set correctly.
