Responsibilities

Maintaining the highest standards of food safety and hygiene within the areas of responsibility in Sheraton and Aloft.

Managing a team of more than 150 food handlers.

Development, implementation, corrective action and implementing legal requirements to make the hotel compliant.

Internal audits, handling the local authority inspections, HACCP certification audits, surveillance audits customer complaints handling, Food sampling schedules, Food poisoning investigations and record keeping.

Third party audit handling and fulfilling the requirements of local authority Dubai Health Department

- Food Control Section as per its specified guidelines for food establishments in Dubai

Implementation of HACCP (codex Alimentarius)/Dubai food code concepts in receiving, storage, transport, Processing, cooking and serving as per food flow

Constructing the HACCP team, regular meetings with team and minutes preparation

Establishment of monitoring system, corrective actions, Verification procedure, record keeping and documentation according to hotel’s HACCP manual

HACCP team leader, issuing food safety memos and amendment preparation for the manual to improve the FSMS

Reporting to the General manager of both properties

Liaising with other departments regards to pest control/preventive maintenance/GHP/health and safety policies and go hand in hand with security manager for H&S compliance.

Daily checking of all the F&B areas and equipment along with responsible person

Verification/Validation of all HACCP and ISO22000 documents Trainings

Basic food hygiene training for all food handlers (Municipality approved internal trainer)
