General Manager

Initially I went there to experience the large, corporate operation system. I attending the courses Hard Rock has in Orlando, Fl to learn the system of operations. I had High praise from all the managers and employees.

I won 4 divisions of focus: Front Operations, Overall Management, retail, and Kitchen and was put in Memphis as General Manager. I also developed a following from my former position and soon developed regular appearances by celebrities such as Woody Harrelson, Aerosmith, and Jerry Lee Lewis.

I worked on the atmosphere and it became known as “upbeat” with themes carried out each weekend. Sales increased from 3M to 10M in the first years and consistently rose with each year. I also brought an idea I used at the other restaurant of an “outdoor bar” to draw interest. Increased sales by 55%.

BB King’s, Memphis, Tn. 1988-2000

Manager

I was asked by BB to set up a new venue to attract more clients. We redecorated, changed the menu and hired polite, upbeat staff. Revenue increased from 1M to 8.5M in 3 years. “Costume Night” was a huge hit and boost to the regular clientele to come in more often. BB’s became the hottest place on Beale St. I also began to draw local bands, not well known, but very good to show them off and boost popularity of the bands. We had people like Al Green, Bread, and of course, BB himself. We became the “go to place” late at night to hear these greats. Increased sales by 28% and food cost savings by 15%.

Rum Boogie, Memphis, Tn. 1980-1988

Assistant/ Assistant Manager I began my career in restaurant management as assistant to the owner. He wanted to make the new site a popular spot for dates or after hour get- togethers. I reached out to local musicians and soon had a list of bands and singers to call. With good short order menu, we soon became a popular spot and we were packed. The revenue went from 250k to over 2M in the time I was there, as well as staff growing from 3-4 to over 50.
