MARY'S MARKET CAFE AND BAKERY ROCKFORD, IL

Managed all daily operations of a multi-unit fast casual bakery cafe with over 110 employees and overall sales

of $4,000,000+ in 2012-2013. Excelled in Management, Finance and Marketing/Strategic Partnerships.

Management

In charge of the brick and mortar expansion of our third unit in 2002. Raised the necessary capital, secured the

leases and managed the build-out, which resulted in an opening of $1,000,000+ in sales and is now the

company’s strongest producer at $1,700,000 in annual gross revenue.

Managed individual store GM's to make sure store goals were attained and excellent customer service was

achieved. Labor, COGS, and sales goals were met or exceeded on a regular basis.

Managed a full scratch, 24-hour, nine employee bakery, which made all its products from scratch and required

close and involved management on account of the specific procedures involved.

Managed a catering department that achieved $800,000 in annual sales, with a product range from corporate

box lunches to high end weddings.

Created and launched a Wholesale Bakery Division, which sold wholesale bakery goods to local restaurants for

resale and resulted in $1,200/day in sales within three years across 40 clients.

Finance

Analyzed financial data monthly financials, weekly sales and expense reports, weekly accounts receivable

reports, bi-weekly payroll reports and analysis, repair and maintenance expenses (which included three

vehicles) and annual P&L’s.

Given the diversity in departments (manufacturing, wholesaling and retailing), created and managed an

interdepartmental accountability and inventory system to ensure the transparency of profitabil ity for each

department, which became a key tool to the company’s continued success.

Marketing/Strategic Partnerships

In charge of marketing and sales development for all facets of the business. Established a firm market presence

by advertising via radio, newspaper, social networking, billboards, and in-store POP displays.

Established multiple exclusive/preferred partnerships within the community including:

o Rockford Airport Airshow (Exclusive): 100,000 meals/yr, approximately $40,000 profits/yr

o Anderson Japanese Gardens (Exclusive): $250,000 revenue/yr

o Pavilion at Orchard Ridge Farms (Preferred Provider): $130,000 revenue/yr
