Provide direct hands on operational oversight, training and supervision for assigned shift in

the Dining Facility, immediately correcting deficiencies as noted.

Coordinate DFAC labor requirements, rations, supplies, equipment, equipment maintenance,

grounds/building maintenance and service requests with the DFAC Manager, DFAC Staff, DFAC

Subcontractor personnel, Military Representatives and other company organizations providing

support services to DFAC Operations.

Provide cross-leveling coordination and support as required to assure all menu items are

available. Insure rations were properly received and inventoried and delivered to DFAC.

Coordinate and support Special Events staged in facility.

Provide constant attention to Safe Work Practices, immediately addressing any unsafe acts

witnessed..

Check all food production equipment for safe and proper operation. Report and follow up on

equipment requiring maintenance or replacement. Also trained company and subcontractor Food

Production personnel on proper operation of kitchen equipment and used of chemicals

Review Preventive Medicine and company QA/QC Inspections with DFAC Manager. Correct

all documented deficiencies.

Conduct a Cooks Mount Inspection prior to the start of each shift and will check

subcontractor DFAC staff against DI Medical provided roster to assure only properly medically

cleared personnel report for work in the DFAC.

provide daily Safety AHA training and documented training at the start of each shift to

include safety, security, hygiene and sanitation.

I also conduct a pre-shift grounds walk to check for litter, problems with the generator, waste

water, potable water and dumpster areas.

Review/validate or prepare as assigned, all Production Records daily, all Kitchen Requisitions

before delivery to Food Service Warehouse.

Assure Temperature Logs are properly maintained; that hot food is served hot and cold food is

served cold and assure that the highest sanitation standards are maintained

Verbal Daily Report to DFAC Manager and l assume DFAC Managers duties in his or her

absence

Diploma in hotel management and catering tech.

Experience in south and north Indian cooking

Excellent English, Tamil, Malayalam and Hindi knowledge.

Sincere and hardworking, adapting easily to new protocols.

Experience

Successfully completed 6 months training in Ben & Thommy catering service, Gujarat

from the date of (04-11-2005 to 05-05-2006)

Ben & Thommy catering service pvt ltd from the date of (01-08-2006 to 09-06-2007 ) as

asst cook then I was got trained by my company managers to work as a store keeper,

kitchen supervisor

National Insurance Guest house In charge ( caretaker)

And I also worked in Arabian Hut Restaurant in Chennai (India) citi center as Grill

chicken Master for 3 months burger and sandwich maker for 3 months and Sharvama

chicken master at last getting all training I was worked as kitchen supervisor . period of

work ( 01-07-2007 to 28-07-2009)

I got a job offer from DynCorp International as a cook on feb 2010 after seing my job

they gave training in all department like kitchen, store, QA/QC, Fire safety, food safety

by my manager after completing all training I was work as a Food service Supervisor till

2012 sep .
