Major work responsibilities include research and experimentation work for development of value added products from Asian carrot (Daucus carota L).

Title and objectives of Ph.D. work

My thesis was on “Development of functional food products from Asian carrot (Daucus carota L)”.

To study the variation in the quality of carrot during the carrot season in the local fruits and vegetable market

To standardize the pre-treatments for the drying of different forms of carrot roots

To compare the drying modes for the drying of different forms of carrot

To develop the products from the different forms of dried carrot

To study the storage quality of the products

To calculate the economics of the different products.

Industrial application

Asian carrot is β-carotene rich highly perishable root vegetable which is available in market only during the season. This study certainly adds novelty for obtaining dried forms of carrot which can be used in different products after rehydration, which could be affordable and meets industrial as well as consumer demand throught the year. Besides, these dried forms of carrot could be helpful to design new value added instant products.

Currently working as Senior Executive Research & Development in G. D. Foods MFG (INDIA). PVT. LTD (Brand Name TOPS) (2nd April 2018 to till date).

LTD is manufacturer of Processed food products- Tomato Ketchup, Culinary Sauces (Green Chilli, Red chilli, Snack and Continental Sauce), Pickles, Jams, Marmalade, Vinegar, Soya Sauce, Ginger & Garlic Paste, Instant Mixes (Vadda, Sambhar, Dhokla, Dosa, Idli, Kulfi, Cake, Jelly, custard, gulabjamun and Drinking chocolate), Corn flour, Baking powder, corn flakes and Vermicelli’s etc. under the “TOPS” brand name.

Responsibilities

Recipe standardization for the development of new products and enhancement in the existing products.

Working on development of new products like Culinary Sauces (Pizza & Pasta Sauce, Dahi Bhalla Sauce, Imli Pudina Sauce, Dark Soya Sauce, Kabab Sauce and Schezwan Sauce), Pizza Topping, Chutney (Tamarind Chutney, Tamarind Date chutney and Schezwan Chutney), Instant Milk shake mixes (Elaichi, Vanilla, Rose, Strawberry, Badam Elaichi, Chocolate and Butterscotch), Instant Kulfi mixes (Chocolate, Keasr Badam, Mango and Rabri), Instant Idli Mixes (Tomato, Beetroot and Carrot), Syrups (Chocolate, Butterscotch, Pineapple and Strawberry) and Instant Cake mixes.

Analysis of competitor samples available in market.

Physico-chemical analysis of finished products like Jam, Tomato Ketchup, Sauces, Pickles and Vinegar for different quality characteristics such as Total soluble Solid, Acidity%, Salt%, pH, sugars, phenols, antioxidant activity and Viscosity etc.

Sensory evaluation of the different standardized products by the sensory evaluation panel.

Raw material and packaging material testing.
