Supervise the steward in maintaining cleanliness, orderliness and sanitation of kitchen areas and other areas of responsibilities during his shift.
Checks condition of dishwashing machine and its detergent dispenser and rinse additive injector makes hourly supervision of all kitchen areas
Assists in the implementation of House Rules and Regulation and F&B Policies and Procedures on proper handling of operating equipment’s.
Make sure the kitchen crockery and other equipment is organized on the proper place or shelves
Check the daily function sheet and make sure that the chafing dish and other kitchen equipment being prepared
Conducts monthly inventory of F&B operating equipment’s, kitchen utensils.
Assists in the preparation of yearly budget and capital expenditure expenses
Conduct daily briefing for steward staff on his shift
Monitors and controls issuance of F&B operating equipment’s under his shift
Trains staff on proper use and dilution and dosage of all kinds of cleaning detergents
To assist the steward on his shift for special cleaning program or big event
Communicate effectively with Executive chef and other section head
Maximize productivity from all steward staff under his shift
Minimize the wastage of all operating supplies, in particular chemical
Participates with all staff committee and other sports activities to promote the hotel’s image
Ensure all equipment is clean and in good working order
Check all chemical levels and inventory
Wear all PPE as according to Hotel standards
Review Banquet Event Orders
Set up stations
Adhere to all sanitation guidelines
Assist the Cooks and Servers as necessary
Ensure all items are clean according to sanitation guidelines

Ensure proper set-up, breakdown and maintenance of all banquet functions.
Interview, hire and train new stewards as required. Maintain proper administrative records on associates i.e. Attendance log, coaching and counseling sessions, disciplinary forms, etc.
Ensure that floors are swept and mopped. Keep floors clean and dry, spills are picked up immediately using wet floor signs, dry rags, and dry mops.
Clean walls, tables, racks, sinks, floor mats and disposal area. Polish stainless steel.
Clean ovens, hoods, filters, drains, hot boxes, steam tables, flat boxes and ceiling vents, according to schedule or as specified by the Executive Chef or Chef of their respective area of responsibility.
Maintain organization and ensure proper storage and cleaning of all rolling stock and racks, silver, presoaking and operation of dish machine.
Ensure all trash is emptied at end of shifts; containers washed out and returned to kitchens.
Comply with attendance rules and be available to work on a regular basis.
