I usually sit down with the owner find out their biggest issues. First then create a checklist of all things they want help with. Menu planning, food ordering explaining to them the benefits of fresh versus frozen or packaged. What alcohol to purchase depending on the type of establishment they are going for. Teaching them how to train an efficient front of house and back of house operations day to day. I also taste many plates on their menu to see if it tie bland or to par for taste. I research the area they are in and see if their restaurant is servicing the needs of what their patron’s palette is seeking. I check food quality over quantity. I have sit down meetings with the back of house staff and front of house usually in a group to get a feel of what the staff thinks is wrong or can change. Test the cooks level in cooking and see if they really know how to do their job and possibly demote or promote depending on studying them. Training all staff how to greet and approach people. Where you carry 45 lbs of sand on your back for 3 miles that you must complete in 45 minutes with your legs bent at a 45 degree angle my record time was 31 min flat.
