North Coast Correctional is a privately owned prison that houses minimum

security inmates and Lorain Correctional is as State prison that houses

maximum security inmates. My food service responsibilities were the same at

both institutions.

. Ensure the safety and sanitation of all food products, equipment,

kitchen and front line areas

. Train, coordinate and supervise inmates working in all of the Food

Service Department to ensure that all policies and procedures are

adhered to

. Follow all food and equipment safety and sanitation

Record keeping and inventories ie.temperature logs and chemical

inventories

. Volunteer as a Crisis Negotiator, when called upon, to assist in

listening and speaking with inmates (before possible cell extractions)
