Currently the Plant Manager/Food Safety Coordinator for a USDA inspected sausage manufacturer of both Ready to Eat and

Raw products. Plant Manger duties include but are not limited to ordering meat, casing and spices for production, forecasting

production needs; as well as ordering all sanitation chemicals and employee protective equipment. Overseeing and monitoring

processing supervisors, ensuring that production quotas and food safety and quality parameters are being met, while working

closely with customers to ensure their satisfaction. Preventive maintenance and adjustment of processing and packing

machinery; having attended and completed the ROSS MAP tray sealer course.

Food Safety duties include establishment, validation and implementation of HACCP, SSOP and Plant Flow Design.

Experience establishing and implementing Food Defense Plans, GMP’s, and Quality Control, Employee Training, Traceability

programs as well as third party audit experience. HACCP and SQF certified, with more than 20 years’ experience in Hazard

Analysis and CCP monitoring.

More than twenty years’ experience in product development of Argentinian, Latin American and Caribbean sausages, sauces

and specialty deli items.
