1 Assisted the Mentor Veterinarian in training new PHV's, Inspectors, and
Interns in all aspects related to food inspection activities. Involved with
Compliance reviews, IDV reviews and an EIAO assessments. Documented a
weekly journal of findings/observations related to plant operations which
could pose a food safety concern. Utilized journal entries to perceive
possible food safety trends; utilized as a training aid, and documented
findings to manage possible concerns, which may not be adequately addressed
in the establishment programs. Conducted NOIE meetings, with plant
management and SVMO, presenting the situation in understandable terms and
provided scientific information regarding the inadequacies of establishment
operation programs (HACCP/SSOP) and systems.
Consumer Safety Inspector (HIMP) 8/1999 - 8/2000
Promoted as a Consumer Safety Inspector, GS-8 in a HACCP Base Inspection
Model Project (HIMP). Performed offline oversight and verification.
Reviewed the plant's HACCP, SSOP, and other plans and the plant's execution
of those plans, including its records, sampling, pre-shipment review,
monitoring activities to ensure that plant is meeting regulatory
requirements. Verified that all monitoring, verification, and corrective
action records are being maintained, and appear to be true, correct, and
unaltered. Verified that plant met all critical limits and/or is recording
deviations and corrective actions, as well as, performing corrective
actions if need be. Determined if corrective actions are sufficiently
adequate to resolve problem. Inspected each carcass and part on the line,
as well as, evaluated the on-going effectiveness of the establishment's
food safety (FS) and other consumer protection processes (OCP). Took
appropriate regulatory control actions to prevent adulterated product from
entering into commerce. Conducted ante-mortem inspection of all animals at
rest and five to ten percent of animals in motion and retained animals for
further disposition by the SVMO, if the animal was suspected of having a
condition that may possibly result in condemnation.

Hired as a WAE inspector, a task-oriented position and learned the
significance and consequences of the inspection methodology from farm to
table and applied this information with a comprehensive thought process, on
the importance to inspect each carcass and make the precise disposition.
Verified pre operational sanitation procedures. Performed ante-mortem
visual examinations of poultry animals to determine by appearance and
behavior that nonentity was abnormal. Monitored plant personnel when
handling downers and verified compliance according to the Humane Slaughter
Act. Performed post-mortem inspections of heads(livestock), viscera,
carcasses, and edible offal for pathological conditions. Rejected and
condemned poultry with apparent unsafe or unwholesome conditions. Monitored
proper blood samples technique when collected by plant employees from
livestock, and verified that all procedures were in accordance to APHIS/VS
guidelines. Assured that proper sanitation was conducted, after the
handling of suspect animals to prevent cross contamination to wholesome
products. Assured all evisceration cuts were acceptable for proper removal
of viscera and that carcasses were properly opened to permit drainage
through the thoracic inlet. Monitored that all proper washing/trimming
procedures were being performed, including parts and carcasses resulting
from salvage and reprocessing procedures. Monitored that pre-chill and post-
chill standards were met and AQL standards for giblets were satisfactory.
