Responsibilities:
• Preparing for service by ensuring the kitchen is well-stocked with necessary ingredients, as well as cleaning, cutting, and marinating food.
• Cooking, plating, and serving food while coordinating with other kitchen staff, junior chefs, and waitstaff.
• Hiring and training junior chefs to ensure efficient kitchen operations.
• Creating new dishes and planning menus to offer a diverse selection.
• Ordering foods and dry goods, as well as managing rostering for the team.
• Maintaining the correct levels of fresh, frozen, and dried foods in the storeroom.
• Adhering to stock rotation, stocktaking, and minimum wastage guidelines to reduce costs.
• Budgeting and costing ingredients and dishes to ensure profitability.
• Ensuring hygiene standards are consistently maintained, with an approved food safety plan in place.
REQUIRED SKILLS
- Advanced Diploma in Hospitality
- Diploma in Hospitality
- Certificate 3 and 4 in Commercial Cookery
- Woodfire Pizza experience
- Modern Australia cuisine
- Traditional Pasta experience
