Culinary Officer

Pick-up inmates from their assigned housing units according to the

current jobs roster and shift assignment and escort to culinary as

required.

During count times all the inmates will be moved to the dining hall and

counted by unit and moved back into the kitchen.

Conduct periodic and frequent checks and informal counts every thirty

minutes of all areas of food service looking for contrabands and/or

damage to the property.

Search and count all items on food cart prior to the carts being removed

from food service for delivery to housing unit.

Ensure that inmates do not enter or exit the culinary department with

any unauthorized items.

Maintain constant accountability of utensils.

Ensure that all tool cages and culinary doors are secured at all times.

Prior to the end of shift and prior to the inmates shift change, the officer

will visually inspect the entire culinary area to ensure all utensils and

food items have been properly stored and turned in, all appliances are

shut off and all doors are secure.

Accountability/Observation

Maintain inmate accountability by making frequent, irregular tours

through the housing unit. Be observant and visible to the

inmate/resident population.

Monitor activities within the housing unit throughout your tour of duty.

Monitor activity within inmate/resident cells for suspicious behavioral

patterns.

Report all unusual behavior or information to the Shift Supervisor/Unit

Manager and document it in your unit log.

Ensure that all inmates are present and authorized. Report any

unauthorized inmates/residence discovered in your unit to the Shift

Supervisor/Unit Manager.

Searches

Perform random pat searches of inmates/residents entering or exiting the

unit.

Ensure that a minimum of three cell searches are conducted in each

housing unit on first and second unit.

Ensure that common area searches are conducted routinely to ensure

that all areas are searched at least once per week.

Ensure that all inmates/resident are properly clothed and possess their

inmate/resident identification card prior to entering/exiting the unit.

Ensure all inmate/resident movement, such as releases, transfers to

other units, court movements, placement in Segregation or Restricted

Housing or medical, etc., are recorded in the unit log book.

Conduct counts in accordance with CCA-PG-07 Procedural

Guidelines-Count as scheduled.

Segregation Officer

Observation

Personally observe all inmates/residents at least every thirty minutes, on

an irregular basis, to ensure the safety and security of the

inmates/residents unless documentation exits that requires more

frequent observation.

Observation will include looking in each cell to ensure that no unusual or

unauthorized activities are occurring.

Inspect all security devices, locking devices, windows, doors, and

security lighting each shift.

Conduct a vehicle inspection and document findings on the 8-12A Driver

All driver(s) and passenger(s) must comply with all state, city, and

county motor vehicle rules and regulations when operating a motor

vehicle. Under no circumstances should a company vehicle be operated

by any individual under the influence of alcohol or drugs.

Observation

Observe interior and exterior security for unusual movement, especially

during hours of darkness.

Monitor activity in the parking areas for any unusual behavior or

sightings.

Patrolling the Perimeter

Perimeter patrol vehicles are limited to the security perimeter and shall

not stray off the perimeter road/path without prior approval of the Shift

Supervisor.

Unauthorized Traffic

The perimeter road/path is restricted to authorized traffic only. Any

unauthorized vehicles or persons will be stopped and questioned.
