MODERN BREAD & BAGEL WOODLAND HILLS July 2022 – August 2023 Spearheaded the new store opening for their Los Angeles location, worked closely with the general contractor for the build out. Recruited culinary leadership and provided training support. Oversaw menu development and lead recipe costing process. Created all FOH/BOH training material company wide for both New York and California. Created standard operating procedures, job aids, inventory tracking, par and prep list to maximize on cost. Implemented shipping for the LA location which generated an additional 25% revenue increase monthly. Created budgets, forecasting, weekly financial flash reports and an annual P&L for all four locations. Brand management/partnership with: Chef Ludo Lefebvre, Menchie’s Headquarters, Voodoo Doughnuts, and Richard Pink to uphold quality and integrity within the venue’s operation. Changed warehouse logistics with receiving for faster delivery time. Work closely with line engineers and visual merchandisers for quicker put through. Created Standard Operating Procedures (SOPs) in all six concepts. Improved Variable Operating Profit (VOP) over budget by 9.1% for Pink’s in 2 months, 6.5% over budget for Ludo Bird. Improved Variable Operating Profit (VOP) over budget by 13% for Menchie’s in 3 months, 22% over budget for Voodoo. Mastered operating systems to ensure accurate recipes/usage is correctly being depleted by yield testing and inventory control. Ensure weekly one-on-one are conducted with all management.
