I also troubleshooted when necessary and documentation also was taken daily. There was a formula to go by in which all ingredients had to be measured perfectly .
• I hang the raw hams on the steel trees that hold 60 hams to send them to the smoke house so they can be cooked. That’s about 7000 or more a night. We have about two to four hangers doing this job.
