Took over existing restaurant and was responsible for overall operation of business. Established a P&L and inventory system to maintain proper food and labor cost. Put together new menu and pre paired daily specials to maintain and increase customers. Promoted and trained a manager to help with operations and over saw the hiring and training of new employees.

Went into an environment I knew nothing about. Learned how to cut and get maximum yield from various fish type. Learned about the various commercial fishing rules and regulations and established relations with various state and local officials.

From opening to closing the restaurant, maintained control of monies in the store. Balancing at end of the night and making deposits.
