Assistant Quality Assurance Manager

Overhauled several of the Food Safety Pre-Requisite

programs (Sanitation, Glass/Brittle Plastic and GMPs).

Responsible for managing the QA laboratory and a team of 14

QA specialists, technicians and auditors. Our team

inspected raw materials, packaging materials and finished

products for quality and food safety. We audited the entire

process for adherence to company policy and procedures.

Zentis North America/Sweet Ovations LLC 2006 to

2013

In 2006 I revived an underperforming QA department into a fast-

paced, high energy team capable of excellence in driving

the company's quality program to our customers. In 2010 I

was promoted to Corporate QA Manager and became responsible

for second plant in Gardena, CA. My role changed in 2012

with the acquisition of Sweet Ovations by Zentis and my

role changed to Food Safety and SQF Manager responsible for

three plants (Philadelphia, PA, Gardena, CA and Plymouth,

IN).

Main responsibility was overseeing Quality Assurance programs with a

focus on food safety. I am also the primary contact for all

third party food safety audits. My shared responsibilities

include: Sanitation, Pest Control, Inventory control,

Regulatory, Vendor Approval, and Plant audits by customers,

third parties, and government agencies.

.Made improvements to the entire quality program to complete SQF

certification for three manufacturing plants.

.Reduced the operating budget of the QA department (Philadelphia

plant) by 25% saving approximately $250,000 per year

.Developed batch adjustment calculator (pH and Brix) to improve

quality and increase profits by over $500,000 per year

.Managed the total un-sellable inventory down by 1.5 million pounds

(>85%) in less than a year- My programs helped increase the

"Right the First time" percentage near 99% from less than

95%

.Reduction of customer complaints (Philadelphia plant) over

the last three years by 30% in 2007, an additional 10% in

2008 and another 15% in 2009- In 2010 I reduced the Gardena

plant complaint levels by 50%

.Designed and implemented the Master Sanitation Schedule and HACCP

plans

(Lead the Food Safety/HACCP teams in Philadelphia and Gardena plants

(Primary contact and lead person responsible for passing > 50 audits

during the past several years in two plants (Gardena and

Philadelphia)

(Implemented Alchemy Systems in two plants to greatly improve the

company's ability to manage its training programs

(Implemented a self-inspection program and established plant metrics

around it to measure continuous improvements around plant

GMPs, maintenance and sanitation.

.Re-designed the microbiology lab and initiated a testing program for

food pathogens. Designed and implemented an environmental

testing program for plant surfaces, air and water.

Astor Chocolate Corp.

2005

Technical Director

Created an entire quality assurance and sanitation plan for two

chocolate plants in Lakewood, NJ and Novato, CA

Responsible for Quality Control, Sanitation, Product Development,

Pest Control, Waste Management, Vendor Approval, and Third

Party, Customer, or Regulatory audits.

. Significantly improved several programs such as GMPs, HACCP,

Inventory Control, and Master Sanitation Schedule

. Implemented many new programs such as Receiving Inspections, Lot

Coding, Mock Recalls, Quality Hold, Approved Suppliers,

Environmental Sampling, Complaint Monitoring, Metal

Separation, etc.

. Developed an action plan to prevent the loss of business

for two of Astor Chocolate's largest customers

. Saved >one million dollars in product and packaging stock

by obtaining an extension to sell product with labels that

did not meet the new trans-fat law effective Jan. 2006

Quality Assurance Supervisor

Started up the Post harvest division of the Florence Quality

Assurance Department

Responsible for managing the daily activities of the QC lab, Post

Harvest division and Sample department, two shifts each day-

seven days per week, with up to 18 technicians reporting

directly. Duties included sanitation pre-op inspections,

HACCP verifications, Technician training, document control,

Food safety audits, etc.

. Greatly improved the QC lab's coverage of the plant by providing

each technician with the necessary tools and training to

properly do their jobs

. Helped reduce raw product rejection levels with increased

communication to vendors and by conducting audits in the

field.

. Improved customer satisfaction levels by continuously

interacting with quality reps at distribution warehouses,

restaurants, and supermarkets

range of Puratos group in North America including product

material and equipment sourcing

. Improved the flavor, texture, functionality, and shelf-

life quality of an entire product line while simultaneously

reducing raw material costs by 60%.

. Secured a huge contract with a large customer by

developing a new product to match an existing competitors

product, the submitted sample was not a match but

outperformed the competitors product in every category

tested.

.Technical support for all Belcolade customers in North

America by providing instructions for the use of chocolate

in all baking and candy making operations large and small-
