ROLES AND RESPONSIBLITIES
INTERNAL AUDITS
• To Conduct Internal Audits to check and improve either FIFO Followed or not, Hygienic Conditions, either SOPs
followed on not or many other things for our all outlets.
• Giving briefing to staff regarding How to Improve Quality of our food.
• Ensure that all food is handled, prepared, stored, and served in a satisfactory manner.
MICROBIOLOGICAL LAB:
• To supervise the laboratory activities, quality of Receiving of all Raw materials, etc.
• Microbiological Analysis of Raw materials / Finished Products / Packaging materials/ Stability samples using
microbiological methods like Total aerobic microbial Test, specified microbes Identification Test, Microbiological
monitoring as per GMP (Settle Plates), Culture Transfer ( sub culturing & Maintenances),Environmental
Monitoring, hand swabs etc.
• Culture & Media Maintenance.
• Prepare & update of various documents & Records i.e. Log Books, Validation, and Calibration, Monitoring,
Cleaning, Stability and STP & SOP documents as per GMP & GLP.
• Validation/ Monitoring Direct impact systems Eg: Environment monitoring, Purified Water system and their
trending/record preparation & maintenance.
• Develop, implement and facilitate training programs in related to GMP & Personnel hygiene.
• Monitor Laboratory hygiene/ Microbiological robustness from Quality perspective (equipment design, processes,
etc.).
CHEMICAL AND INSTRUMENTAL LAB:
• Analysis of finished products and intermediates of Food samples by using validated Chemical, Instrumental and
Conventional methods.
• Handling the instruments like UV-Spectrophotometer, pH meter, butyrometer, TDS Meter, Heating Mantle,
Magnetic stirrer, lactometer, Kjeldhal and Soxhlet and update the various records i.e. Log Books etc.
• Chemical Analysis Performed – Protein, Fat, Acidity, Alcholic Acidity, Ash, Water insoluble ash, Nutritional
Labelling, Shelf life study.
• Water Analysis – Hardness, Tubidity, BOD, COD, Alkalinity, Ca & Mg, TDS, Chlorine.
• Oil Testing – Saponification Value, Iodine Value.
• Did six weeks summer training with Taj Group of Hotels at their “TAJSATS Air Catering Ltd” unit,
IGI Airport Complex, New Delhi-110037, whereby worked in Quality Assurance Department on
“Micro Biological Analysis” project.
JOB PROFILE: -
• To execute all the Microbiological Analysis (like- E.coli, Total Plate Count, Staphylococcus aureus, Yeast &
Mold, Total Coliform Count, Vibrio, Bacillus cereus, Salmonella etc.) on the given food samples.
• Microbial testing of water (like- MPN).
• Checking the hardness of water, free chlorine present in the water and pH of water.
• Estimation of Fat % in the milk by using Gerber Method.
• Checking the physical quality of incoming Fruits and Vegetables.
• Tracking & filing of all food and fridge temperatures.
• Conduct Inspections & audits of Premises, to ensure compliance with Food Safety & Hygiene.
• Responsible for high standards maintenance of hygiene & food safety in all production and related area by taking
Food Handler’s Hand Swabs, Air Swabs etc.
• Checking the quality of raw food material before receiving and CCPs before and during preparation of food.
• Checking the HACCP implementations and Monitoring the CCPs.
• Checking the effectiveness of sanitizer used by the company by SWAB method.
