product concept, optimization of product formula, thermal treatment and the impact

of processing parameters on product stability.

• Assumed responsibility on handling food product development projects in

laboratory and in pilot plant scale and supervised a staff of three undergraduate

• Developed the plan for R&D for the scale up of prototype products, providing process

flow diagrams

• Formulation of yogurt drink applying various components such as flavors, gums,

stabilizers, emulsifiers, proteins and milk with various fat content

and retorting thermal treatment on flavor volatiles profile of final dairy product

(Vitamin C, caffeine, fat, sugar content, colorimetry, moisture content, solids)

and NWA statistical process control software.
