product concept, optimization of product formula, thermal treatment and the impact
of processing parameters on product stability.
• Assumed responsibility on handling food product development projects in
laboratory and in pilot plant scale and supervised a staff of three undergraduate

• Developed the plan for R&D for the scale up of prototype products, providing process
flow diagrams
